Raspberry Vodka Infusions

I've been making raspberry infused vodka for about 12 years.

I pick the organic fruit - throw it in a big jar - unwashed (it's a clean berry not anywhere near the dirt) I want the berries fresh and I don't want to dilute the vodka!

Fill your jar with about 3/4 raspberries and then pour the vodka over top and make sure the berries are covered by a good inch (although they do float - but don't worry about it) raspberries ripen in the beginning of July (where I come from) store in a cool dark place.

I strain the infusion in December and add a little raspberry liqueur to taste, to keep it smooth.
