Pineapple and Blood Orange Infusion

by Martin Schott
(Baton Rouge, LA)

Well my recipe takes about 9-10 pineapples and about 15 blood oranges. In a container to fit I nicely arrange the pineapples to about 1/3 capacity of the container.

I the cube the blood oranges. By cutting the top and bottom of then cutting four side off. Sometimes a bit of the white inside of the skin will remain in the corners of the orange cube. I arrange them around the perimeter of the container and fill in the inside of the orange ring with the remnants then I continue to stack pineapple on top.

Fill to the top with your chose of vodka. I use Fris. Let this sit out for 2 weeks, I don't refrigerate at all. Strain twice through cheese cloth to get all the remnants of fruit particles out.

Shake, add splash of sprite, and serve up.
