How Much Booze To Pour?

Q: Does one pour the same amount of alcohol into a mixed drink as they do a drink on the rocks. Example, if I pour 2 ounces of alcohol into an ordered vodka/tonic, is 2 ounces poured for an ordered vodka on the rocks, or does "on the rocks" assume a larger pour?

A: I would consider it to be the same pour, but others might say different. For most restaurants and bars the booze is where the profit is and therefore manage the pour cost carefully. Pour too much on a regular basis and the house loses money. Under pour and customers will stop coming and give your place a bad rap (drinks are weeeak).

So it's typically up to the bartenders discretion. Pour the drinks right and if there is a good customer who is consistently cool, brings new people to the joint and tips well then reciprocate by hooking up a little extra on the pour.
