Bubbly Cocktails
Below are some of the most common bubbly cocktails. They are made with Champagne of course. Champagne is a sparkling wine produced by inducing the in-bottle secondary fermentation of wine to effect carbonation. It is named after the Champagne region of France. Producers of sparkling wine can only call their product Champagne if it is made in the Champagne region of France. Champagne is typically produced from Chardonnay or Pinot Noir grapes.

In movies, or sports championships, you often people celebrating with the POP! and spray of a Champagne bottle. This looks cool and festive, but is fairly wasteful of your good stuff. Here is another way to go about it:
Remove the foil and pull down the wire loop; Drape a towel over the bottle; Place your hand over the cork; Loosen but don't remove the wire cage; Grasp the cork and the cage firmly with your hand, then rotate the bottle (rather than the cork) by holding it at the base; this should allow the cork to come out on its own.
You're trying to ease the cork out with a sigh or a whisper rather than a pop. This prevents the cork from flying across the room, producing a foamy, Champagne spray. See if you can open a bottle of Champagne so carefully that very little sound is emitted at all.
With that said, people are always trying to make a good thing better. Here are some of the more delicious bubbly cocktails:
Bellini
4oz Champagne 2-3oz peach puree
Pour peach puree into the bottom of a Champagne flute. Top off with Champagne. Stir slowly to mix, but be careful of the Champagne overflowing.
Champagne Cocktail
5oz Champagne Sugar cube Angostura bitters
Douse a sugar cube with a couple shots of Angostura bitters. Drop the sugar cube in the bottom of a Champagne flute. Top off with Champagne.
French 75
1oz Cognac 3/4oz Simple syrup 1/2oz Fresh lemon juice Champagne
Shake the first three ingredients cold and serve on the rocks in a bucket glass. Top off with Champagne.
Kir Royale
1/4oz Creme De Cassis 5oz Champagne
Pour Creme De Cassis into the bottom of a Champagne flute. Top off with Champagne. Mimosa

Pour the orange juice into the bottom of a Champagne flute. Top off with Champagne.
